The pan-fried variety of the Chinese jiaozi dumpling, known as guotie, is a Northern Chinese dumpling typically filled with minced pork, Chinese cabbage, scallions, ginger, rice wine, and sesame seed oil. Crunchy and soft textures are achieved by a special method of preparing; while the bottom of the dumpling is frying, a small amount of liquid is added to the pan which is then covered, thus allowing the rest of the dumpling and the filling to steam.

When it comes to the shape, guotie should always be long and straight as it can stand more easily and it does not fall over during cooking. Goutie can be literally translated as pot sticks, so these dumplings are often nicknamed potstickers, especially in North America.

A quintessential seafood delicacy of the Greek island of Symi, simiako garidaki or Symi shrimp is a unique variety of tiny shrimps that inhabit the sea around the island. Bright red, delicate, and sweet, the small crustaceans are packed with flavor, which has made them famous throughout the whole country and beyond.

The most common way to enjoy these tiny crustaceans is crispy-fried in olive oil and garlic, typically seasoned with nothing else than salt and pepper. Due to their delicate nature, the fried shrimps are usually eaten whole, including tails, shells, and heads.

Shuǐjiǎo are Chinese dumplings served without broth or soup, filled with various ingredients that are limited only by one's imagination. The boiled dumplings are a staple food of northern China. Some of the most popular ingredients for the filling include shrimp, cucumber, purple cabbage, ground pork, bean sprouts, vermicelli, and rice.

Shuǐjiǎo are especially popular during the Lunar New Year, when whole families in northern China prepare them, with some family members rolling out the dumplings, some mixing the ingredients for the filling, and some pinching them into crescent-like shapes.

Tsukemen is a noodle dish from Japan that is eaten in a unique way. Cold noodles are dipped in the accompanying soup, broth, or sauce, which are served hot in a separate bowl. The noodles can also be dipped in vinegar or spiced up with chili sauce before consumption.

Unlike ramen, where the boiled noodles are placed in the soup bowl, tsukemen is characterized by first washing the noodles with water, which stops them from expanding. It is said that tsukemen is ideal for summer because it provides the wonderful flavors of ramen without the extra heat.

Fritto misto is one of those dishes that differs widely across the country. Along the Italian seaside, it will always include crustaceans and mollusks, typically shrimp and squid, and often paranza, which is a collective name for very small whole fish such as fresh anchovies, sardines, baby mackerel, or mullet.

In northern parts of the country, particularly in Piedmont, fritto misto is mostly made with vegetables and, depending on the season, includes semolina, veal brain, brochettes of cheese and prosciutto, sometimes even apples and amaretti biscuits.

Saganaki is a highly popular Greek appetizer where various vegetables, meats, or seafood such as shrimp or mussels are wrapped in cheese, then pan-fried or seared. The cheese can also be prepared on its own, without any accompaniments. It is then pan-seared until it develops its distinctive golden crust, and served in the so-called sagani, a small, two-handled pan in which it was fried.

In the past, the word saganaki referred to a method of spicing up the local cheese by Greek peasants, who would pan-fry different varieties of cheese such as feta, kashkaval or manori. While regional variations of the dish include the use of formaela cheese in Arachova and halloumi in Cyprus, the cheese used in a typical Greek saganaki is usually graviera, kefalograviera, kasseri, kefalotyri, sheep's milk feta or any other firm cheese that melts well without losing its shape.
