Shiitake

Shiitake are mushrooms that are native to East Asia, growing in groups on the decaying wood of trees such as oak, chestnut, beech, maple, shii, and poplar, among others. They can be used in fresh or dried form. Their flavor is often described as salty, bitter, sweet, sour, and umami at the same time.


These mushrooms are also often praised for their health benefits, and it's believed that some compounds help in boosting immunity and have benefits for heart health. Most of the shiitake are grown in Japan, but they also grow in Canada, China, Singapore, and the United States.


Both fresh and dried shiitake are used in stews, soups, and stir-fries.
