Anticucho de corazon is a traditional dish originating from Peru, consisting of beef heart skewers. The dish is made with a combination of beef heart, oil, red wine vinegar, garlic, oregano, cumin, salt, and aji panca hot pepper paste. The beef heart is cut into cubes and marinated in a combination of all other ingredients.


The cubes are then skewered and grilled until fully cooked and slightly charred. These beef heart skewers are traditionally served with accompaniments such as thick slices of boiled potatoes, corn, and aji amarillo sauce on the side as a dip. It's recommended to enjoy anticucho de corazon with a bottle of ice-cold beer.

Kokoreç is a traditional Turkish dish that's also popular in other countries, especially in Greece, where it's known as kokoretsi. However, there are some differences between the Turkish and Greek versions. In Greek cuisine, people use lamb offal such as lungs, kidneys, hearts, and liver, and in Türkiye, they use small and large intestine and sweetbreads without any additional ingredients.


For the Turkish version, kokoreç, the ingredients are rinsed and cleaned, then wrapped onto iron skewers to be grilled over charcoal. Once done, the dish is usually served with bread or tucked inside the bread with various spices such as oregano, cumin, and chili flakes.

Gyutan is a Japanese dish originating from Sendai. It consists of pieces of thinly sliced beef tongue that's cooked on a charcoal grill. It's typically seasoned with salt or soy sauce-based tare sauce before grilling. The dish is usually accompanied by pickled vegetables, a combination of steamed rice and barley known as mugi gohan, or oxtail soup.


Gyutan can also be served as a donburi over steamed rice, or as a curry, which is also accompanied by rice. It's believed that the dish was invented in 1948, when a local yakitori restaurant started to specialize in beef tongue dishes.

Kokoretsi is a traditional Greek dish consisting of lamb or goat offal that is chopped into tiny pieces, seasoned with lemon juice, olive oil, salt, and pepper. The offal is then skewered, covered with caul fat to keep the pieces in place, and cooked over charcoal.


It is traditionally consumed as an appetizer or meze on Easter Sunday in Greece. Although it is associated with Easter, it can usually be found throughout the year across the country. Kokoretsi is also popular throughout the Balkans, and the name of the dish comes from the Albanian word kukurec, meaning tripe.

Drob po selski, meaning liver cooked village-style, is a traditional Bulgarian dish that is made by cooking liver with vegetable chunks and (optionally) mushrooms in a clay earthenware pot. Pieces of chicken, beef, or pork liver are first roasted with sautéed onions, carrots, peppers, garlic, tomatoes, and mushrooms, and they are then typically simmered with some water and flour.


Wine, tomato purée, and spices are often added to the dish for extra flavor. In Bulgaria, the dish is a typical lunch or dinner meal that is usually garnished with freshly chopped parsley and eaten with slices of homemade bread on the side.

Molleja, also known as sweetbread, refers to the thymus (corazón or heart) and pancreas (cuello or neck) of beef cattle, with the former being smoother, less fatty, and more flavorful compared to the latter. Molleja is typically prepared one of two ways.


It is either soaked overnight in water or milk, then boiled and grilled, or only grilled twice, first to precook and then to form a crispy outside. When perfectly prepared, the texture of molleja is crunchy on the outside and buttery on the inside.


It is served as a starter sprinkled with salt and lemon juice.

Oreja a la plancha is a traditional tapa from Madrid. It consists of pig's ears that are cut into slices or cubes and grilled in olive oil with spices and seasonings. In Madrid, the dish is often served with mushrooms and pieces of bacon, accompanied by lemon wedges (and small toothpicks for eating the ears) on the side.


In the Basque region, the ears are served with salsa Vizcaina, a sauce made from onions, garlic, stock, and red peppers. Most people claim that the best part of oreja a la plancha is the texture – from the crunchy cartilage to the chewy skin.


It's recommended to pair this tapa with a cold beer on the side.

Kebda Eskandarani or Alexandrian liver is the Alexandrine specialty consisting of fried beef liver with spicy seasonings such as cumin, garlic, cardamom, and chili peppers. It is usually served in sandwiches along with tahini dip, or on its own, accompanied by warm rice, lime wedges, or pita bread on the side.
