"The tacos of buttery tender lengua – tongue – are justifiably well known. We, in the Jewish community, grew up eating tongue, but as I knew it, is was always presented as a slippery luncheon meat. When I grew old enough to realize what it really was I stopped eating it. It wasn't until decades later, when I came to Mexico that I learned to love lengua - it is one of the most succulent and flavorful parts of the cow."
