Kuchmachi

(კუჭმაჭი)

Kuchmachi is a Georgian dish made with kidneys, livers, lungs, spleens, and hearts of chickens, pigs, or beef. The offal is cooked with butter, onions, garlic, and seasonings such as bay leaves, black pepper, salt, and coriander, while some people like to add walnuts for extra flavor.


The dish is usually served hot and garnished with pomegranate seeds on top.
