Y Fenni is a Welsh cheese made from a combination of mature Cheddar, wholegrain mustard, and Welsh ale. It melts easily, so it is often placed on steaks for the final grilling. The cheese is coated in either red or yellow wax, and its flavor is spicy without being overbearing.
The name of the cheese is derived from the Welsh name for Abergavenny, a market town specializing in its production. This unique cheese is often a part of the popular ploughman's lunch.
Little Black Bomber is a Welsh extra mature cheddar that's coated in black wax, hence the name. It's produced in the town of Rhyl by Snowdonia Cheese Company. This hard cheese is made from cow's milk and has a smooth and creamy texture.
The aromas are rich, while the flavors are strong and caramel-like. It's recommended to serve it with crackers, pickles, or a crusty baguette. Interestingly, Little Black Bomber has won awards at the World Cheese Awards, the Great British Cheese Awards, and a Super Gold at Mondial Fromage in France.

Fish and chips is a traditional dish consisting of freshly fried fish fillets and sliced fried potatoes. The fish is dipped in a batter of eggs, flour, and milk, and it’s then fried in oil, lard, or beef drippings. The most common types of fish used are cod, haddock, skate, and pollock, but cod is the most popular choice, with 60% of all fish and chips meals using it as the preferred fish.
Cod has a texture that is very supple, tender, and mild, and it makes for a great contrast to the crispy-fried batter shell. In addition, its tender meat nicely absorbs the condiments and seasonings such as malt vinegar and salt. You can find fish and chips made with cod throughout the country, but it’s especially popular in southern seaside towns such as Hastings and Brighton.

Griddle-baked Welsh cakes are a traditional delicacy made with a simple base of flour, lard or butter, sugar, and eggs. They come in different regional varieties that often include spices, lemon zest, raisins, currants, and various types of flour.
Depending on the type, they can be enjoyed on their own as a sweet snack or a dessert, preferably paired with afternoon tea and served with butter and jam on the side.

To call this creamy, savory sandwich melted cheese on toast would be a sacrilege. Welsh rarebit is a traditional snack, ideally based on locally produced Cheddar or Caerphilly cheese, melted and mixed with butter and cream or ale, then poured over a piping hot, buttered toast.
The dish stems from the 14th century as a way of accentuating the greatness of wheat bread and Welsh Cheddar. The debate about rabbit versus rarebit went on until the late 19th century, when the word rarebit caught on. The rabbit version derives from the fact that the Welsh were extremely bad hunters, so their dinners resulted in cheese instead of rabbits.

View moreTraditional Welsh Caerphilly, also known as Traditional Welsh Caerffili, is a cheese made from pasteurized cow's milk in South and West Wales in the United Kingdom. It was first made in Caerphilly around 1830. The cheese has a high moisture content and a white rind that is lightly dusted with flour.
When young, its texture is moist, soft, and supple, the flavor fresh and lemony, and it was popular in mining communities due to its tough rind, as it could be easily eaten with dirty hands in the mines. Its salty and moist curd replaced the minerals that were lost during the long hours of undergound work.

Faggots are old-fashioned, traditional offal-based meatballs characterized by their large size. They are especially popular in Wales and the Midlands region of England, made from pork offal and cheap cuts of meat that are mixed with spices and fresh herbs, making it an inexpensive, yet extremely nutritious dish.
What makes faggots unique is the addition of caul fat (stomach membrane) on the external layer, helping to hold the meat in place. Traditionally, the dish is served with mushy peas, mashed potatoes, and onion gravy. The dish gained popularity during World War II, when meat was scarce, and people found a way to use all of the leftover meat in the preparation of this hearty delicacy.

View moreThis traditional Welsh dish consists of hard-boiled eggs baked in a bed of soft mashed potatoes, all smothered in a thick, creamy sauce made with leeks, butter, and cheese. The dish is then additionally topped with some more grated cheese. Anglesey eggs, called wyau ynys mon in Welsh, are best made with local ingredients: while the hardy leeks - once amongst the only vegetables grown in Wales - impart a subtle, sweet flavor to this simple seasonal supper dish, Welsh salted butter and Aberwen cheese turn it into something utterly sublime.
And even though the delicious dish is substantial enough to be enjoyed on its own, Anglesey eggs are also often served as a side dish with grilled sausages or bacon chops.
Tatws popty is a traditional potato dish originating from Wales. This comforting Welsh dish consists of oven-roasted potatoes that are usually cooked together with meat. Nowadays, most recipes for the dish remove the meat and only roast the potatoes with some vegetables such as onions and carrots.
Meat stock is often added to the roasting pan so that the potatoes, once roasted, will have a crispy top and a moist bottom. The dish is a staple in most Welsh homes, especially in autumn in winter, and every household has its own way of preparing tatws popty.
Carmarthen ham is a traditionally made ham from the Carmarthen area in West Wales that is dry salted and air-dried, and then sold either whole, boneless or thinly sliced and vacuum-packed. It's made from pork legs and matures for six to nine months.
It is dark beige on the outside, and deep pink to dark red on the inside, when sliced. Also, cream-colored fat is transpersed throughout. Its flavor is salty, sweet and mellow, while the texture is springy and tender. It can be used in salads, served with melon, wrapped with asparagus or paired with cheese.
