Pad Thai is Thailand's national dish, a flavorful stir-fry (pad in Thai) dish consisting of rice noodles, tofu, dried shrimp, bean sprouts, and eggs. If it's made with meat, chicken and pork are some of the most popular choices. The flavors are an intricate combination of sweet, sour, and salty, with a well-balanced contrast of textures.

Pad Thai is probably one of the most popular Thai dishes abroad. Its origins can be traced to a period of nationalism in the country, after the 1932 revolution that ended the absolute monarchy. There was a public contest to find a new national noodle dish, and the winner was a Pad Thai consisting of noodles, radish, sprouts, peanuts, and eggs.

Twice cooked pork is a Sichuan specialty prepared by cooking fatty pork leg or belly (with the skin intact) in two different ways. Pork is first simmered in a pot and cooled in the refrigerator in order for the meat and fat to firm up. After that, the meat is sliced and stir-fried with vegetables such as cabbage, bell peppers, leeks, and mushrooms until it develops a brown color and the skin gets crispy on the edges.

Ingredients may vary from one cook to another, but most of them add a sauce made with rice wine, soy sauce and various other condiments to the wok along with meat and vegetables. It is believed that the dish was invented during the Song Dynasty period by a poet who was preparing a pork dish for his friend.

Lomo saltado is a traditional dish consisting of stir-fried marinated slices of sirloin or beef tenderloin, onions, yellow Peruvian chilis, and tomatoes. The dish is typically served with French fries and rice on the side, and can be found on the menus of almost all Peruvian restaurants, whether simple or upscale.

Over the years, some Chinese cooking techniques were combined with the Peruvian, and new dishes were invented, such as lomo saltado. Today, there are many variations on the dish, so beef can be replaced by chicken, when it is called pollo saltado

Beef chow fun is a Cantonese dish prepared by stir-frying previously marinated beef slices together with flat, wide rice noodles (hor fun), and bean sprouts. Because of the preparation method, beef chow fun is a true measure of any accomplished Cantonese chef.

Specifically, it is necessary to get two things right: wok hei — the cooking technique of stir-frying the ingredients at high heat which imparts them with a special umami flavor; and pow wok — a way of quickly tossing the ingredients without the use of a spatula, which prevents sticking and does not break the delicate rice noodles.

32 (Pancit) and 34 (Pancit Bihon) have the same noodles used in the article. Both are called "bihon" same as the Chinese bihon. However Pancit (32) is the fresh type of noodles (fresh) used similar to Japanese Yakisoba. In the Philippines, there are 3 MAIN and general types of noodles used: 1. Pancit or Pansit - the fresh type of noodle used for soups or stir fries. 2. Bihon - the thin glass noodles also used in "palabok" or pancit "luglug" like the ones in Jollibee's menu. and 3. Sotanghon or commercially known as vermicelli - the one used in chicken soup or sometimes in Pancit Sotanghon stir fried noodles. Others are 1. Lomi - thick noodles similar to udon of Japan. 2. Udong - Egg noodles mainly used in canned sardines dish or stew. 3. Misua or similar to Japanese somen eaten widely in summer in Japan. Misua is used in soup too in the Philippines. Some people in the capital don't distinguish well Bihon, Sotanghon and Canton. Generally they just reffer to all of them as pancit/pansit. Maybe this is the reason why 32 and 34 have the same pictures represented.

35. Cashew Chicken(ไก่ผัดเม็ดมะม่วงหิมพานต์) is Thai food, not American food. This dish is adapted from Chinese food called Gōng bǎo jī dīng/ Kung Pao chicken(宫保鸡丁) Gong Bao Ji Ding (宫保鸡丁)or " ไก่ผัดพิทักษ์วัง" , the origin of Thai stir-fried chicken with cashew nuts. This menu in Thailand is also widely known and can be eaten in Chinese restaurants. There is also an adaptation "Cashew nuts" are stir-fried instead of peanuts, which gives another sweet and nutty taste. and modified the sauce used for stir-frying to a type that is commonly available in Thailand, becoming "chicken stir-fried with cashew nuts", a popular menu among Thai people. Although the taste cannot compete with Gong Bao Ji Ding, But the taste is quite similar. 20. Pad Kee Mao(ผัดขี้เมา) is Thai food, not Lao food at all. There is no word "Kee mao" (People who like to drink alcohol and get drunk) in Lao Language. They only use the word " ຂີ້ເຫຼົ້າ "(Kee hao) to call people who like to drink alcohol and get drunk. "ຜັດຂີ້ເມາ" or "ຂີ້ເມາ" You can search for this word on Google, but it will only show you a few search results. which means that the word "Kee mao" is not a commonly used word in Laos. But if you search for "ขี้เมา"(Kee mao) You will see many search results on Google. Especally the word "ผัดขี้เมา" Drunken noodles or drunkard noodles is a Thai stir-fried noodle dish similar to phat si-io but spicier. In English texts, it is rendered as pad kee mao, pad ki mao, or pad kimao /ˌpæd kiː ˈmaʊ/ – from its Thai name Thai: ผัดขี้เมา, RTGS: phat khi mao, [pʰàt kʰîː māw], in which phat means 'to stir-fry' and khi mao means 'drunkard'. The dish is widely available in restaurants or at street vendors in Thailand but it is also highly popular in the United States, and has become ubiquitous on Thai restaurant menus throughout.[5] Despite its name, alcohol is not one of the ingredients. Ingredients The dish originates from a spicy stir-fry dish that originally did not include noodles. The base ingredients of the aforementioned spicy stir-fry are: garlic, shallots, fresh chilies, and shrimp paste, and holy basil (for topping). Eventually, the stir-fry was converted into a noodle dish made with broad rice noodles (kuaitiao sen yai in Thai), soy sauce, fish sauce, oyster sauce, garlic, meat, seafood, chili, fresh black pepper pods and holy basil, which give rise to its distinctive spiciness. Certain versions of this dish may include eggs. The recipe for the noodles is not rigid and may often differ. Substitutions for some base ingredients can be made and the dish can be easily made vegetarian or vegan. Fish sauce can be substituted for Thai thin soy sauce. The meat or seafood can be substituted for tofu or vegetables such as cabbage, carrots, broccoli, snow peas, or bell peppers. Broad rice noodles may be substituted for fresh chewy rice noodles or even regular pad Thai noodles. Some can be served without noodles and instead serve the vegetables and protein stir-fry with rice. Other variations include the dish using instant noodles, or a fusion version using spaghetti instead of rice noodles. Pad see ew is generally regarded to be a sister recipe to this dish. Drunken fried rice or khao phat khi mao are similarly prepared dishes using the same base ingredients.
