Unlike the world-known pad Thai, phat kaphrao is the uncrowned national dish of Thailand that you will find sold as street food and in restaurants. It is ubiquitous and simple to prepare, enjoyed by people from all walks of life. The authentic recipe calls for either pork or chicken, Thai holy basil, chilies, and garlic, seasoned only with fish sauce and palm sugar. Occasionally, it will also include yardlong beans, and today, phat kaphrao will also have oyster sauce, soy sauce, and onion. The piquant stir-fry is served atop Jasmine rice, topped with an extra-crispy, sunny-side-up egg. Also, it is usually accompanied by prik nam pla, a Thai table sauce consisting of chilies, fish sauce, garlic, and lime juice.
