Traditionally prepared on Stir-up Sunday, the last Sunday before the start of the Advent season, Christmas pudding is a must serve on Christmas Day in most British households. The recipe is relatively straightforward; flour, breadcrumbs, suet, dried fruits, candied peels, sugar, spices, salt, and alcohol (mostly brandy, but rum and beer are also used) are mixed into a mass.


The mass is then pressed into a mold — in the past, the mass was wrapped in a cloth resulting in a cannonball shape — and steamed for several hours. The steamed pudding needs to be stored in a dark and cold place, wrapped in a cloth, to mature until Christmas Day, but can be served immediately.

Spumoni or spumone is a molded ice cream dessert, that according to The Oxford Companion to Sugar and Sweets, is dome-shaped and is made up of two layers — one on the outside is a custard-based ice cream, while the one underneath is either a semifreddo or a parfait.


Although there is no fixed recipe, the most common combo is the hazelnut, chocolate, and stracciatella trifecta, with the filling inside. In the past, sponge cake or Savoiardi soaked in some kind of a liqueur or wine, most commonly Marsala, would be the filling of choice.

Halfway between porridge and pudding, Ukrainian kutia is a simple, nutritious dish served on festive occasions such as Christmas Eve, Orthodox New Year’s Eve, Epiphany and Easter. The recipe and its ingredients depend on the occasion, the region, and the family tradition.


Generally speaking, багата кутя (bahata kutia) or rich kutia is prepared on Christmas Eve and is made with wheat or barley, poppy seeds, honey, nuts and dried fruit, most commonly raisins; one of its main characteristics is that it must be lean.

The quintessential British teatime confection, the Battenberg cake, although simple when it comes to ingredients, is quite a technical challenge for any baker. It consists of two differently colored Genoise or pound cake strips glued together with apricot jam which are stacked to make a checkerboard pattern and enveloped in marzipan.

Even though a jar of factory-produced marshmallow cream is regularly seen in most American home pantries, especially in New England, this simple dessert is surprisingly easy to make from scratch. A simpler version suggests mixing the egg whites with salt and corn syrup, adding powdered sugar, mixing again, and finishing off with a few drops of vanilla extract.


On the other hand, a slightly upgraded version uses a candy thermometer while boiling water, corn syrup and sugar to 246˚F, which is then mixed into egg whites whipped with salt, a little sugar, and cream of tartar. The result is a gooey, fluffy, and sweet white cream which can be used as a cake filling or frosting, or as a spread for the kids’ favorite - a fluffernutter sandwich with peanut butter.

Richly sweet and featherlight at the same time, okoshi is a simple, yet sophisticated treat which is most often sold by street vendors or in candy stores, but can also be prepared at home. First, cooked or steamed rice is air-dried until it becomes translucent.


During this process, rice is stirred regularly to break down any clumps. Then, rice is deep-fried briefly in hot vegetable oil, so it expands. Once it starts floating on the surface and before it turns brown, the rice is removed and left to drain on a paper towel.

One can instantly recognize this traditional Scottish, sultanas-studded fruitcake by a top pattern of concentric circles made with blanched almonds. The batter made with flour, butter, eggs and sugar is first flavored with Sevilla orange peels and optionally, sherry.


Sultanas are added as soon as the batter reaches a consistency that is firm enough to hold the dried fruit, which would then ideally, be evenly distributed in the cake. Traditionally, this is a round cake in which case the almonds are placed on top in concentric rings, or in the case that it's shaped like a slab cake, the almonds placed on top are arranged into neat rows.
