Kokoreç is a traditional dish that's also popular in other countries, especially in Greece, where it's known as kokoretsi. However, there are some differences between the Turkish and Greek versions. In Greek cuisine, people use lamb offal such as lungs, kidneys, hearts, and liver, and in Türkiye, they use small and large intestine and sweetbreads without any additional ingredients.


For the Turkish version, kokoreç, the ingredients are rinsed and cleaned, then wrapped onto iron skewers to be grilled over charcoal. Once done, the dish is usually served with bread or tucked inside the bread with various spices such as oregano, cumin, and chili flakes.

Gyutan is a Japanese dish originating from Sendai. It consists of pieces of thinly sliced beef tongue that's cooked on a charcoal grill. It's typically seasoned with salt or soy sauce-based tare sauce before grilling. The dish is usually accompanied by pickled vegetables, a combination of steamed rice and barley known as mugi gohan, or oxtail soup.


Gyutan can also be served as a donburi over steamed rice, or as a curry, which is also accompanied by rice. It's believed that the dish was invented in 1948, when a local yakitori restaurant started to specialize in beef tongue dishes.

Ciğer kebabı, or liver kebab, is a popular Turkish dish of skewered and grilled liver originating from southeastern Turkey, particularly Diyarbakır, Gaziantep, and Şanlıurfa. It is popularly enjoyed in southern provinces and holds cultural significance.


It is also often served for breakfast. Preparation involves cutting and seasoning the liver with salt, spices, and sometimes vegetables and skewering it with tail fat. In Gaziantep, the liver is cubed and skewered, while in Mersin, Adana, and Şanlıurfa, it is threaded in smaller pieces using special liver skewers, often alternating with tail fat in Gaziantep.

The hearty batchoy is a popular Filipino soup consisting of pork offal, chicken or beef stock, and fresh round egg noodles. Generously seasoned with shrimp paste and (occasionally) soy sauce, the soup is usually topped with pork cracklings, fried garlic, and a raw egg.


Although there are numerous stories about the origin of the dish, there is no doubt that it was created in Iloilo, more specifically in the district of La Paz, from where it spread to other parts of the country to become one of the most famous Filipino soup dishes.

Kelle paça çorbası is a traditional soup made with offal as the key ingredient. Sheep's or goat's head are placed into a pot with water, onions, and salt, and the soup is then slowly cooked until the meat falls off the bones. Some people like to add a roux of butter and flour to the soup, followed by a beaten egg, garlic, and lemon juice.


Lamb neck, tongue, and brain can also be included in the soup. It's recommended to serve the soup with greens and lots of crusty bread on the side.

Isaw is a popular Filipino street food dish consisting of marinated, boiled, and grilled chicken and pork intestines which are usually coiled and skewered on a stick. Although similar, pork isaw is typically slightly larger and chewier than the chicken version.


The marinade is usually prepared with soy sauce, oil, ketchup, garlic, and seasonings. Thoroughly cleaning and boiling the intestines before they are placed on a grill is an essential part of the preparation process because it eliminates all food-born pathogens.

Seolleongtang is a hot, invigorating South Korean bone soup prepared by boiling cow's bones, feet, head, organs, brisket, and shank for a long time until the broth develops a creamy white color. The soup is a staple in numerous Korean households, especially during the cold winter months.


It is believed that the soup was invented because King Seonjong of the Joseon Dynasty needed to feed a large number of people at a worship ritual for the god of farming, during which a cow would be sacrificed. The name of the dish is derived from the word Seonnongtang, meaning soup boiled at Seonnongdan, and later on, the word evolved into Seolleongtang.

Proben (occasionally referred to as proven) is a satisfying Filipino snack, and one of the most popular street food items in the country. It is prepared with an unusual chicken organ named proventriculus, a component that is in many ways similar to chicken gizzard.


Coated in flour or cornstarch, the tiny proben pieces are shortly deep-fried until the exterior becomes golden brown and crispy. They can be fried individually and served in plastic bags, or skewered and fried on bamboo sticks. Cheap, fast, and nutritious, proben has come to represent one of the most common street food varieties in the Philippines, which is especially favored among the young students.

Nankotsu is a traditional dish made with chicken cartilage, usually the parts from the breast bone or the leg. The cartilage is placed on skewers, and it's then grilled (or sometimes deep-fried) as a yakitori dish. Nankotsu doesn't have a strong flavor, and the texture is often described as very crunchy and chewy.


The dish is typically served with salt and lemon wedges on the side, and it can often be found in izakaya bars.
