Pollo encacahuatado is a Mexican dish believed to have originated in Puebla. It consists of chicken pieces that are cooked in a delicious peanut sauce made with lard, tomatoes, onions, garlic, peanuts, chilis, cinnamon, and chicken stock. The meat is slowly simmered in the sauce until all the flavors are thoroughly combined.


When done, the dish is typically served in shallow bowls and accompanied by warm tortillas or rice and beans.

Mexican enmoladas are essentially enchiladas covered in mole sauce. The enchiladas might be filled with a wide array of ingredients, but they are most often filled with chicken and crumbled cheese. The tortillas are first fried, dipped into the warm mole sauce, then filled with chicken and cheese.


If needed, more mole sauce is spooned over the enmoladas. Before serving, enmoladas can be garnished with sliced onions and chopped coriander. This tasty Mexican dish is a great example of using leftover mole sauce for the creation of a new meal.

Tacos Arabes is a traditional dish originating from Puebla. The pita-bread wrappers (pan árabe) are filled with thinly sliced cumin-marinated pork, spicy chipotle salsa, and a sauce consisting of yogurt, lemon juice, olive oil, garlic, and parsley.


These 'Arabian' tacos are typically served with lime wedges on the side. As the name suggests and many people believe, Middle Eastern immigrants came to Puebla after WWI and brought their shawarma-related culinary tradition of serving sliced roasted lamb (it was replaced with pork in Puebla) in pita bread.

Sopa Poblano is a smoky Mexican soup originating from Puebla. It is made with roasted poblano chili peppers as key ingredients. Although there are a few versions of the soup, apart from poblano chilis, it is prepared with butter, onions, leeks, garlic, potatoes, chicken stock, and sour cream.


Once prepared, the soup should be smooth in texture and served hot, ideally garnished with grated cheese and tortilla strips, although coriander and corn can be used instead.

Chalupa is a thin, crunchy tortilla whose form is reminiscent of a canoe or a cup. The shape is achieved by pinching and baking the masa dough, which is then fried and topped with numerous savory ingredients such as pulled pork, ground beef, shredded chicken, various cheeses, potatoes, and red or green chili sauce.


The dish is also popular in the United States, but the Americanized version looks more like a taco than a boat. Although the first written mention of chalupa dates back to 1895 in Mexico, it is believed that the dish originates from pre-colonial times.

Cemita is a popular Mexican sandwich originating from Puebla, consisting of a fresh, sesame seed-sprinkled bun filled with tiny strands of shredded cheese, avocado slices, pickled jalapeños, papalo (herb with a unique flavor), and cutlets of meat such as pork, beef, or chicken, all fried in breadcrumbs.


The sandwich can be additionally stuffed with tomatoes, lettuce, and mayonnaise. The name cemita refers both to the bun and the sandwich.

Chile relleno is a Mexican dish with origins in the city of Puebla. It consists of chili peppers stuffed with ingredients such as cheese, nuts, cinnamon, and diced meat. Once the peppers are stuffed, they are usually dipped in eggs and flour, then deep-fried in hot oil.


The dish is traditionally served as a snack or an appetizer, most commonly in late August and early September, since it is connected to the Mexican Independence Day and the Day of San Augustin. It is believed that chile relleno was invented in the 16th century, during the time of the Spanish conquest.

Chile pasilla con queso is a traditional chili pepper-based dish originating from Chihuahua, Oaxaca, and Puebla. The dish is usually made with a combination of dry-roasted pasilla chili peppers, onions, tomatoes, olive oil, salt, tortillas, and Oaxaca cheese or mozzarella.


The chili peppers are soaked in water, then added to the pan with sautéed onions and tomatoes. The combination is shortly cooked, and the chili water is poured into the pan, then seasoned with salt. The cheese is layered on top, and the mixture is simmered until the cheese begins to melt.

Chiles capones is a traditional dish that's prepared in many areas of the country, but it's especially popular in Puebla. The dish consists of cheese-stuffed chili peppers and it's made with a combination of charred and peeled jalapeños or poblano chiles, fresh cheese, epazote leaves, and salt.


Once stuffed, the chili peppers are fried in oil on both sides, then placed into a warm tortilla and garnished with sour cream. Chiles capones should be enjoyed immediately, as soon as they're removed from the pan.

Sopa de hongos y poblano is a traditional soup originating from Puebla. The soup is usually made with a combination of onions, garlic, mushrooms, poblano chili peppers (roasted and diced), oil, corn, tomatoes, chipotle chili peppers, epazote, chicken stock, salt, pepper, and zucchini flowers.


The ingredients are simmered in chicken stock until everything is tender, and the soup is then seasoned with salt and pepper, garnished with shredded zucchini flowers, and served while still hot.
