Enchiladas rancheras

Enchiladas rancheras is a traditional dish where stove-top cooked enchiladas are drenched in ranchera sauce. The tortillas are usually filled with cheese, while the ranchera sauce is made with a combination of tomatoes, stock, bell peppers, onions, red chilis, garlic, cumin, and oregano.
