Montes de Toledo

Montes de Toledo is an extra virgin olive oil made from selected olives of the Cornicabra variety in the interior of the Autonomous Community of Castile-La Mancha, in the area around the Montes de Toledo mountain range. This olive oil is very fragrant and flavorful, but its most prominent characteristic is its high content of polyphenols, antioxidants that are both very beneficial for human health and also serve as a natural preservative for the oil itself.


Montes de Toledo has fruity aromas accompanied by a pleasant bitterness and spiciness. It is yellow-green to bright green, depending on the stage of the olive development at the time of harvest. This extra virgin olive oil is obtained by mechanically extracting the oil, taking care that the temperature does not exceed the 27 degrees Celsius during any stage of the production.
