Drumlin is a traditional cheese hailing from Ireland's County Cavan. The cheese is made from raw cow's milk and it's left to age for at least 2 months before consumption. At 2 or 3 months old, the cheese develops delicate, smooth, and nutty flavors.
As it ages further, the flavors and aromas become stronger. Beneath its natural rind, the texture is hard and dense. It's recommended to serve Drumlin in slices and pair it with a glass of Cabernet Sauvignon. Apart from the traditional version, there are also varieties with cumin, garlic, green peppercorns, and one version that's smoked over beechwood.
