This extra virgin olive oil is produced in Metaggitsi in the Sithonia municipality, an area enclosed by a river, hills, and the sea. It is characterised by the presence of the Strongilolia (Galani or Prasinolia) variety of olive, which is grown commercially in this area and almost nowhere else. Chondrolia Chalkidikis olives may also be used in this olive oil, but only up to 10% by weight.
The olives are harvested early, starting in October when they are green-violet, and then cold pressed so as not to damage or impair the aromatic components of the oil. The special characteristics of this oil can be attributed to the Mediterranean climate and high phosphorous content of the soil.
