Bananarac

Bananarac is an American cocktail that was modeled on Sazerac. It consists of banana liqueur, rye whiskey, brandy (Armagnac or Cognac), simple syrup, and bitters. To prepare the drink, a dash of absinthe is added to an old-fashioned glass.


The glass is then twirled, allowing the absinthe to coat the sides. Any excess is discarded. Other ingredients are poured into a mixing glass filled with ice. The combination is mixed until well chilled and is then strained into an old-fashioned glass previously coated with absinthe.


Before serving, lemon zest is expressed over the drink. This cocktail was a creation of Natasha David, a co-founder of New York City’s now-closed Nitecap.
