Horse's Neck

Horse’s Neck is an American cocktail made with a combination of brandy, ginger ale, and a dash of Angostura bitters, if desired. Traditionally served on the rocks, the cocktail is highly recognizable by a long strip of lemon peel which is draped over the edge of an old-fashioned or highball glass in which it is served as a garnish.

Lemon peel is not added simply for dramatic appeal, as it also adds a tangy balance to the cocktail. The first version of this cocktail was made in the 1890s, when it was made with ginger ale, ice, and lemon peel, but by the 1910s, bourbon or brandy were common additions to the drink, creating Horse’s Neck that we know and love today.
