Cuy al horno, or over-baked guinea pig, is the hallmark dish of Tipón, a city considered Peru's cuy capital that lies some 25 kilometers outside of Cusco. The typical recipe calls for a guinea pig seasoned with a mixture of salt, cumin, pepper, oil, huacatay, and, occasionally, lemon juice.


Once seasoned, the guinea pig is typically left to marinate for up to one day, and before baking, huacatay branches are placed inside its abdominal cavity. Traditionally, it is baked in a wood-fired oven at high temperature. When it comes to serving, potatoes are the typical accompaniment, but in Tipón, it's these three: rocoto relleno stuffed with vegetables, a cheese and potatoes casserole, and, of course, potatoes.

Picante de cuy is an ancient Andean dish that is nowadays present in all of Peru and can be prepared in a myriad of different ways. The main ingredient is cuy, a guinea pig, which is shallow-fried until crispy yet tender. After cuy is fried, a spicy sauce is prepared next, typically consisting of garlic, ají peppers, oil, and salt.


The cuy is returned to the sauce and served with boiled potatoes and salsa criolla. However, some recipes add boiled potatoes to the sauce, in which case the dish is usually served with white rice. Depending on the region, the dish will also have cumin, Chinese onions, peanuts, the heart and liver of the guinea pig, broth, oregano, raisins, olives, mint, and pisco as ingredients.

The peculiar thing about this rich stew is that it is thickened with pumpernickel as opposed to say flour or roux, which makes it truly unique when compared to most stews. Also, it is very generously seasoned with pepper, clover, bay leaf, and capers, often with an added touch of acidity in the form of lemon peels or lemon juice to balance out the flavors.


The preparation begins with sautéeing beef dices in lard, then adding the onions and sautéeing them as well. The rest of the ingredients, spices and broth, are added after, and the stew is simmered until cooked and thickened.
