Tomato Sauce

(Salsa roja, Salsa di pomodoro)

Tomato sauce refers to different sauces made from tomatoes as the main ingredient. In its most simple form, the sauce consists of crushed or chopped tomatoes (and often olive oil) that are simmered until the sauce loses its raw flavor. The sauce is usually enriched with various fresh herbs, spices, and seasonings, and ingredients such as onions, garlic, or chili peppers.


It is believed that tomato sauce dates back to the Aztec times and originates from Mexico. In Italy, a Roman chef Francesco Leonardi first wrote about tomato sauce combined with pasta in the 1790 cookbook L'Apicio moderno. Nowadays, tomato sauce is popular throughout the world, from Italy, France, and Australia to Mexico (where it's called salsa roja) and the United States.
