Rebujito

Rebujito is a popular Andalusian cocktail that is made with sherry, lemon-lime soda, and fresh mint. Typically, dry sherry styles such as fino or manzanilla are used. The drink is popular in Andalusia and sometimes differs among the regions.


It can include lemon zest, lemonade, or tonic water. Often dubbed as the Andalusian take on kalimotxo (which mixes red wine and coke), this light cocktail is a staple on local fiestas and is especially favored during spring and summer festivals.


The drink caught on in the late 1980s, and some claim that it was modeled on Sherry Cobbler—consisting of sherry, sugar, and citrus juice. Rebujito is best served well-chilled in an ice-filled highball or collins glass. This light cocktail would perfectly pair with regional tapas specialties.
