Ragstone

Ragstone is an English log-shaped cheese hailing from Dorstone, where it's produced by Charlie Westhead and Haydn Roberts. This soft cheese is made from pasteurized goat's milk and it's matured from 2 to 3 weeks. Underneath its bloomy rind, the texture is smooth and creamy.

The aromas are milky and goaty, while the flavors are milky, acidic, and lemony. It's recommended to pair it with a glass of crisp rose.
