Aspen Ash is an American cheese produced in Colorado by Haystack Mountain Goat Dairy. The cheese is made from pasteurized goat's milk. It has a bloomy rind that's covered in ash. Underneath it, there is a creamy and soft texture with a nice mouthfeel.
