Mobay

Mobay is an American semi-soft cheese produced in Wisconsin by Carr Valley Cheese Company. The cheese is made from goat's and sheep's milk and it's influenced by the French Morbier. The halves of sheep's and goat's milk cheeses are pressed together aftetr the production, and they're separated by a layer of ash that runs through the middle.


The cheese is bone-white in color, and each half has its characteristics – the goat's milk part is bright and tangy, while the sheep's milk half is sweet and earthy. The texture is supple and semi-soft, and the cheese has won many awards, including a silver medal at the 2011 World Cheese Awards.
