Miel des Cévennes is an intensely aromatic honey made in creamed, liquid or crystallized form and produced in the French regions of Lozére and Gard on the Cévennes massif. The honey has a strong flavor and a dark color.
It may come from chestnut, heather, pine trees, raspberries or blackberries, with chestnut honey being the most distinctive with a warm, woody smell and a slight bitterness. Heather honey has a strong brown caramel smell and some bitterness while berry honeys have a fruity and woody smell, and taste of red fruits and lingering acidity.
