The halves of sheep's and goat's milk cheeses are pressed together aftetr the production, and they're separated by a layer of ash that runs through the middle.
The cheese is bone-white in color, and each half has its characteristics – the goat's milk part is bright and tangy, while the sheep's milk half is sweet and earthy. The texture is supple and semi-soft, and the cheese has won many awards, including a silver medal at the 2011 World Cheese Awards.
