Volailles de Bourgogne is poultry from the French region of Burgundy that is slaughtered at an age close to sexual maturity, with fine, delicate skin, firm and juicy flesh and excellent organoleptic qualities. The poultry can be sold as a whole carcass or cut in pieces, either fresh or frozen.
The animals are reared in the open air where they can move freely on the pastures and they are fed on a cereal-based diet to ensure the maximum quality of the meat. The most famous and renowned of all the poultry from this region is the Burgundian black chicken, sold at quite high prices.
