Lemon Barley Water

Lemon barley water is a non-alcoholic, thirst-quenching beverage that is also used as a health tonic. The drink is made by slowly simmering barley, sometimes with lemon zest, until it is cooked. The liquid is then sieved and combined with lemon juice and honey or sugar.
