Kuzuyu is a Japanese beverage made with arrowroot powder. The drink has a thick, somewhat viscous texture that is attained by mixing the powder with water and then heating the mixture until it becomes translucent. It is often sweetened with sugar.
Drinks made with arrowroot are common in other Asian countries, but they are mainly made as a herbal infusion, in which pieces of the root are steeped in water. Kuzuyu falls somewhere between a drink and a dish, and it has a long tradition in Japan.
