Beillevaire Beurre Cru de Baratte is a luxurious artisanal butter made from raw milk, crafted using traditional methods at the renowned French dairy Fromagerie Beillevaire. This butter is hand-churned in wooden barrels, giving it a rich, creamy texture and an intense, natural flavor that stands out in any culinary application.
The milk used for this butter comes from local farms within a 10 km radius of the Machecoul creamery, located in the Loire-Atlantique region, known for its long-standing dairy traditions. Fresh milk is collected daily and carefully processed, allowing the cream to mature before it is churned in wooden barrels.
Fromagerie Beillevaire is a French company specializing in the production and distribution of dairy products, particularly cheeses. Founded in 1980 by Pascal Beillevaire in the Marais Vendéen region, between the Loire River and the island of Noirmoutier, the company has grown from a family-run dairy into a renowned producer, affineur, and distributor of fine cheeses.
Today, Beillevaire operates six dairies and five aging cellars across France, where they produce and refine a wide range of cheeses, including those with Protected Designation of Origin (AOP) status, such as Camembert de Normandie, Chabichou du Poitou, and Brie de Meaux.
In addition to its own production, the company collaborates closely with around 250 artisanal and family-run cheesemakers, distributing over 400 different varieties of cheese. Beillevaire is recognized for its traditional approach to production, employing methods like churning butter in wooden barrels, which enhances the authentic taste and texture of their products.
