Fritz (or, more accurately, bung fritz) is a sausage made with lean beef or mutton, pork, pork fat, and seasonings and is encased in a sheep appendix. It is an iconic meat product of South Australia, often compared to Devon sausage, but is quite unique regarding its manufacturing process and recipe.
Where Devon sausage often consists of the other way unusable meat offcuts, bung fritz contains high-quality meat trimmings, and the natural casing plays a big role in making this type of sausage a more premium product. It is believed the first fritz sausages appeared in South Australia sometime in the late 19th century, when they were introduced by German immigrants.
