Capo in B is a traditional Triestine coffee specialty, consisting of a small espresso with a layer of foamed milk, served in a glass (bicchiere). The name "capo" is short for "cappuccino", while "B" stands for "bicchiere" (glass), distinguishing it from a traditional cappuccino, which is served in a ceramic cup.
Unlike a standard caffè macchiato, capo in B has slightly more milk, making it a balanced and smooth coffee drink. Trieste, known as Italy’s coffee capital, has a unique coffee culture and terminology influenced by its historical role as a major coffee port.
Local coffee orders differ from those in the rest of Italy, and in Trieste’s coffee lexicon, a "capo" refers to an espresso macchiato, but adding "in B" ensures it comes in a glass instead of a cup. Variations include Capo chiaro in B (with more milk), capo scuro in B (with less milk), capo in tazza (served in a ceramic cup), and capo freddo in B (a cold version with cold milk instead of foamed milk).
Capo in B is deeply embedded in Trieste’s daily coffee rituals, often enjoyed standing at the bar in one of the city’s historic cafés.
