Rava idli is a popular steamed semolina cake invented during World War II by the popular restaurant chain Mavalli Tiffin Rooms (MTR) in Bangalore, India. During the war, there was a shortage of rice, the main ingredient in traditional idli, so MTR decided to use semolina (rava) instead of rice to make idlis.


The batter for rava idli is typically made by mixing semolina, curd (dahi), and a leavening agent, which is why idli is light and fluffy. The batter is then allowed to rest for a few minutes before steaming. Apart from the semolina and curd, the batter usually includes ingredients like finely chopped coriander, cashews, mustard seeds, curry leaves, and ginger, which are added for additional flavor.

Upma is a wholesome Indian dish made with dry semolina, cooked into a thick porridge. Traditionally served hot for breakfast, its taste is slightly bland, so various nuts, beans, and spices such as turmeric and chiles are commonly added to the dish in order to improve its flavors.


Upma originated in South India, but gained popularity over the years, and is now commonly found throughout the country. Hailing from North India, dal puri is a variety of puri, a type of round-shaped Indian bread that is deep-fried until crispy, puffy, and golden. This version of the bread consists of puri dough that’s kneaded with a lentil-based mixture.


Numerous versions of the dish exist throughout different regions, and depending on the spices used for its preparation, the dish can range from mildly spicy to hot. Rava dosa is one of the most popular variations of dosa - the South Indian pancake. Rava denotes the semolina batter used to make this variety of dosa and it can be identified by its crisp and netted texture. The only consistent factor in a rava dosa is the pancake, as the fillings vary in different regions.


More than a dozen different fillings can be found within a single city. The most preferred rava dosa filling are semi-fried onions, served with a choice of coconut chutney and sambar. Dosa has been a breakfast choice in South India for more than 2000 years and has evolved as a readily available meal choice for the entire Indian subcontinent.

Kozhukkatta is the name for Indian rice flour dumplings filled with jaggery and coconut. The dumplings are steamed and then usually served for breakfast, or consumed as a snack, when they are accompanied by tea on the side. In some cases, cooks like to add cardamom or ghee to the filling.


In Kerala, these dumplings are closely tied to Oshana Sunday celebrations, while in Tamil Nadu, kozhukkatta is associated with the elephant-faced god, Lord Ganesh, and it is prepared as an offering to receive his blessings for science, arts, and knowledge.

This Indian crêpe is made with a very thin batter of rice flour, water, and salt. Unlike other Indian dosas which call for much thicker, and fermented batter, this version uses an unfermented and runny batter which is spread and cooked on a hot greased griddle, yielding soft and lacy pancakes.


The batter can alternatively be enhanced with freshly grated coconut or coconut milk. Neer dosa derives its name from the words neer, meaning water in Tulu, and dosa, referring to a traditional Indian thin pancake. These thin pancakes are a quintessential part of the Tulu Nadu region breakfasts, and they are usually served with chutneys, curries, and vegetable sagu dishes.

Visually similar to a pizza, uttapam is a South Indian dish consisting of a batter (based on rice and lentils) that is fried and topped with chopped vegetables such as onions, tomatoes, carrots, and chiles. There is also a version of the dish called mini uttapam, usually served in four pieces per portion, with variable toppings and a number of side dishes.


Traditionally, uttapam is accompanied by sambhar on the side - a rich lentil curry with the addition of onions, coconut, and eggplant.

Kashmiri naan is a traditional flatbread and a variety of naan originating from Kashmir, a state that borders India and Pakistan. The dough is made with a combination of flour, yeast, salt, sugar, dahi, and ghee. Once rolled, the dough is filled with dried fruits, nuts, and spices such as raisins, almonds, cashews, cumin, and fenugreek.


The naan is then baked in a hot tava pan until fully cooked, a bit puffy, and golden brown. This type of sweet naan is usually served for breakfast or as an afternoon snack, when it’s typically paired with tea (Kashmiri chai) or coffee.
