Torta mimosa

Torta mimosa is a delightful Italian cake traditionally made to celebrate International Women's Day on March 8th. The cake is named after the mimosa flower, which is a symbol for this day in Italy, because its appearance resembles the bright yellow blooms of the mimosa plant.


The cake itself consists of a sponge cake (pan di spagna) that is cut into cubes and then used both inside and as a decoration on the outside, mimicking the fluffy, yellow texture of mimosa flowers. The interior typically includes a creamy custard or chantilly cream (a mixture of pastry cream and whipped cream), often flavored with vanilla, lemon, or orange zest.


This cream fills the layers and coats the outside of the cake before the sponge cubes are pressed into the exterior to give it its characteristic mimosa look.
