Torta diplomatica, or diplomatic cake, is a traditional dessert made with layers of puff pastry, sponge cake, and cream. Believed to have aristocratic origins, its name may come from the diplomat profession or the "diplomatic cream" often used in its filling.
The classic version features puff pastry, sponge cake, apricot jam, and diplomatic cream, flavored with maraschino liqueur. A Central Italian variation uses caramelized puff pastry, custard filling, and alchermes liqueur, dusted with icing sugar. In Sicily, a ricotta-based version is popular.
