Taḥt Al-qadir | Traditional Saltwater Fish Dish From Saudi Arabia, Arabian Peninsula | TasteAtlas

Taḥt al-qadir

(تحت القدر)

Taḥt al-qadir refers to a traditional Middle Eastern method of cooking, where the ingredients are placed in a pot, which is then sealed and placed under or within a source of heat, typically in a fire or buried in hot ashes. The phrase literally means "under the pot", and the dish cooks slowly over a long period, allowing the flavors to meld and intensify.

This cooking method is often associated with communal or festive meals, where the slow-cooked dish is shared among family and friends.
