Spezzatino speziato

Spezzatino speziato is a traditional stew prepared with pork as the key ingredient. This spicy stew is made with a combination of boneless pork shoulder, butter, garlic, lemon, white wine, cumin, coriander, salt, and pepper. The cubed pork is cooked over high heat in butter until browned.


A combination of white wine, cumin, garlic, and seasonings is then added to the pan, and it's simmered with the meat until tender. The remaining white wine and lemon slices are then added to the pan and the dish is cooked until the liquid thickens.


Before serving, spezzatino speziato is enriched with ground coriander, and it's often accompanied by polenta or couscous on the side.
