Ceci in Umido | Traditional Stew From Italy, Western Europe | TasteAtlas

Ceci in umido

Ceci in umido is a traditional chickpea stew originating from Italy. This simple dish is made with a combination of chickpeas, garlic, olive oil, salt, and pepper. The chickpeas are soaked and cooked in a pan with sautéed minced garlic and olive oil.

The mixture is then covered with water, seasoned with salt and pepper, and simmered until the chickpeas are tender. Once done, this chickpea stew is served in individual bowls. The dish can be served warm or cold. If desired, additional ingredients such as rosemary and onions can also be added to the stew for more flavor.
