Pasas de Málaga are the raisins produced by sun-drying the Muscat of Alexandria grapes in the Province of Malaga. This Vitis vinifera L. variety is also known as Moscatel Gordo or Moscatel de Málaga.
These raisins are purple-black in color, large and extremely flavorful. The already ambrosial aroma of muscat grapes becomes even more pronounced while they are drying, making these raisins more aromatic than any other. Pasas de Málaga are characterized by a well-balanced sweetness and acidity and pronounced notes of aromatic herbs, rose, geranium and citrus.
