Knockdrinna Meadow is an Irish farmhouse tomme-style cheese hailing from Stoneyford. The cheese is made from pasteurized sheep's milk. Underneath its lightly washed natural rind, the texture is semi-firm and open with small eyes dispersed throughout the body.
As the cheese ages, it develops mild, nutty, robust, sweet, meaty, earthy, and caramel-like flavors.
