Cazelle de Saint Affrique

Cazelle de Saint Affrique is a sheep’s milk cheese originating from Aveyron in the Midi-Pyrénées region of France. The cheese is shaped into small cylinders, and it has a characteristical wrinkly rind. The word cazelle in its name refers to the shepherd’s stone huts found throughout the region.


Once cut, the golden-white rind collapses out into buttery decadence with nutty, earthy, and tangy flavors and hints of hay and field herbs. The texture of this cheese is dense, gelatinous, smooth, and slightly chewy, but if you eat the rind, expect a slightly bitter flavor.
