Sofigado

(Σοφιγαδο)

Characterized by its sweet and sour flavors, this comforting beef stew hails from Lefkada island, and it is believed to have been developed under the influence of Venetian culinary tradition. It is prepared with cubed beef, generous amounts of sautéed onions, red wine vinegar, garlic, rosemary, and petimezi—traditional Greek grapemust.
