Prescinsêua

Prescinsêua (also called quagliata) is a traditional dairy product from the Italian province of Genoa. Named after presù, meaning rennet in Genovese dialect, prescinsêua is in fact coagulated milk, with a texture somewhere between yogurt and ricotta, and a pleasant, lightly sour flavor.


Prescinsêua can be enjoyed on its own or used in the preparation of many traditional delicacies such as torta pasqualina, barbagiuai, or pansoti.
