Pannarello is a traditional cheese hailing from Veneto. The cheese is made from cow's milk and extra cream before the milk is curdled. It's aged for 1-2 days. Some believe that a cheese maker made an error by overheating the milk for curdling and he brought the temperature down with a bucket of fresh cream, the only thing he had nearby.
The texture of Pannarello is compact, soft, and elastic in the mouth, with numerous eyes scattered throughout the paste. The flavors and aromas are that of scolded milk, sweet with hints of butter. It's recommended to serve it with crusty bread, honey, and berry jams.
