Schiz

Schiz is a traditional fresh cheese from the Veneto region of Italy. This cheese has a mild, slightly tangy flavor and a soft, creamy texture, making it perfect for frying or grilling. Unlike aged cheeses, schiz is not ripened; it is typically made from cow's milk and is used fresh.

The name schiz means "split" or "cut" in the local dialect, referring to the way the cheese curds are cut during its production. In Veneto cuisine, schiz is often prepared by slicing it thickly and frying it in butter until golden and slightly crispy on the outside while remaining soft on the inside.

It’s traditionally served with polenta in a dish called Polenta e schiz, creating a delicious contrast between the creamy polenta and the warm, gooey cheese.
