Often touted as the original version of falafels, taameya is an Egyptian variety of the Middle Eastern fritter that calls for fava beans instead of chickpeas. While the exact origin of falafel is debatable, most scholars and food historians agree that taameya has its roots in the Egyptian cuisine.


The fava bean mixture is typically flavored with leeks, onions, fresh coriander, parsley, and cumin, and the fritters are usually coated with sesame seeds before frying. Taameya are known for having a lighter, fluffier, and moister texture than other falafel varieties thanks to the use of fava beans.

This internationally popular, beige-colored spread is traditionally made with mashed chickpeas, tahini sesame paste, lemon juice, and garlic. People across the world love hummus for its tangy flavor and the fact that it is filled with nutrients.

Shakshouka is a delicious combination of eggs poached in a spicy tomato sauce. Although it has an unusual name, the dish is straightforward and easy to make. It is usually made in a skillet in which onions, tomatoes, and spices are cooked until they form a delicious tomato sauce.


Eggs are then added directly to the tomato sauce and poached until done. Merguez sausage can also be added to the dish. It is believed that shakshouka originated in Tunisia, but the dish is well-known and commonly eaten throughout North Africa and the Middle East as well.

Ful medames is an ancient, pre-Ottoman and pre-Islamic national dish of Egypt, a traditional breakfast food consisting of slowly simmered fava beans seasoned with a squeeze of lemon juice, olive oil, garlic, and selected spices. Some remnants of the dish were found in the 12th Dynasty Pharaonic tombs in Egypt, and any food that has been found in an ancient tomb must have been a wildly popular culinary treat.


Because it is a breakfast food that is also good for breaking the fasting, the dish is extremely popular during Ramadan. Although it's an Egyptian dish, it is also prepared throughout North Africa and the Middle East. Ful medames is a staple of the Egyptian diet, so much that the price of beans is regulated by the government in order to ensure that they are affordable to the poorest citizens.

Even though these protein-packed chickpea fritters are listed as one of Israel's national dishes, and are a staple in many Middle Eastern countries including Palestine and Lebanon, it is often suggested that falafel might have evolved from the Egypt dish known as taameya. By the 1950s, to earn a living, Yemenite immigrants in Israel started making falafel in the streets, selling it wrapped in paper, which has eventually transformed this ancient dish into an early form of Israeli fast food and facilitet the global recognition of it.


As an alternative to the Israeli version, the Egyptian taameya uses fava beans instead of chickpeas, while the mixture is typically flavored with parsley, coriander, cumin, and onions. Today, both in Israel and other Middle Eastern countries, falafel fritters are most commonly enjoyed in pita or lafa flatbread sandwiches, topped with fresh or pickled vegetables, and coated either in hummus paste, tahini dip, or a zesty, garlic-flavored yogurt sauce.

Bissara is a comforting Egyptian and Moroccan dish made with puréed beans – either split peas or dried fava beans. It can be prepared in the form of a soup or porridge, while the thicker versions are commonly used as a dip. The puréed beans are typically seasoned with olive oil, lemon juice, and garlic, and the dish is often served with paprika and cumin on the side, while crusty bread is almost mandatory.


Bissara is traditionally served for breakfast, and it is especially popular during winter.

Koshari, also known as koshary, kosheri, kushari, and koushari, is a simple, yet flavorful Egyptian national dish consisting of rice, macaroni, and lentils. The name stems from the Hindu word khichri, referring to a dish of rice and lentils.


It is enough to look for warm, edible pyramids on big, shiny metal platters while in Egypt, as it is also a very popular street food. Small yellow lentils and rice are slowly simmered in a rich stock with the addition of crunchy, fried vermicelli and butter-browned onions.
