Kathi roll is an Indian street food dish hailing from Kolkata. It consists of skewered and roasted kebab meat that is wrapped in paratha flatbread. Some say that the dish was invented because the British didn't want to eat kebabs with their hands, so an ingenious person at Nizam's restaurant rolled the meat in a paratha.


Initially, kathi roll was prepared with eggs and chutney along with the meat. Typically, the cook will roll the dough on a tawa, crack an egg onto it, then add the fillings. Kathi roll is traditionally wrapped in paper and served piping hot. In the 1960s, the cooks at Nizam's replaced the metal skewers with bamboo skewers, giving the dish its name, kathi roll, as kathi means stick in Bengali.

Vada pav is one of Mumbai's favorite sandwiches, its name referring to the key ingredients: vada, or spicy mashed potatoes that are deep-fried in chickpea batter, and pav, or white bread rolls. This iconic street food is said to have originated from a street vendor named Ashok Vaidya, who worked near the Dadar train station in the 1960s and 1970s.


He thought of a way to satiate the hungry workers, and concluded that the ideal dish should be portable, affordable, and easy to prepare. Ashok made vada pav, and its popularity skyrocketed, especially after the Shiv Sena, a Marathi-Hindu nationalist political party, started to promote the sandwich as an ideal working class snack.

Chicken kathi roll is a variety of kathi roll prepared with chicken as the key ingredient. It's a typical street food originating from Kolkata, consisting of flatbreads such as roti or paratha that are filled with marinated and sautéed chicken pieces.


Each flatbread is first lined with an egg that's cracked on top of it before it's spread and cooked. The chicken is marinated in spices such as turmeric, chili powder, cumin, coriander, lemon juice, salt, and mustard oil. Once prepared, the stuffing is mixed with sliced onions, cucumbers, grated carrots, hot chili peppers, and coriander.

Bombay sandwich is a traditional sandwich originating from Mumbai, hence the name. In order to prepare it, green chutney is spread on a slice of crustless white sandwich bread, while butter is spread on the other slice. What goes in between the two slices is a medley of vegetables and spices such as sliced boiled potatoes, masala spices (cumin, fennel, black pepper cinnamon, chaat masala), tomatoes, cucumbers, and onion slices.


The green chutney is usually made by blending mint, coriander, chili peppers, and various spices. There are many types of Bombay sandwiches, and it can be made with three layers (three slices of bread), but each layer should contain a generous amount of masala spices.

Mutton seekh roll is a variation on kathi roll originating from India. The dish is prepared with a combination of mutton kebabs, onions, tomatoes, coriander, green chutney, and paratha flatbread. The flatbread is smeared with the chutney, and it's then filled with seekh kebab, tomatoes, onions, and coriander.


Once stuffed, the flatbread is folded and the roll is ready to be enjoyed. Mutton seekh roll is a popular street snack throughout India, but it's especially popular in Kolkata. If desired, the roll can be enriched with other ingredients such as red chili flakes, garam masala, grated carrots, or paneer.
