La Leyenda

La Leyenda is a small Spanish cheese produced in La Mancha. The cheese is made from raw sheep's milk and it's aged for a full year before consumption. La Leyenda is rubbed with olive oil and herbs, then soaked in brandy or sherry for a week prior to the aging period.


The texture of the cheese is firm and slightly crumbly, while the flavors are buttery and nutty with hints of raisins. It's recommended to pair it with sweet white wines or medium-bodied reds.
