Brački varenik

The history of varenik dates back to the times of old Egypt, Greece, and Rome, and even Nostradamus mentioned it in his Livre des Confitures in 1555. On the island of Brač, it has been made at least since 1885. It is believed that varenik is the oldest addition for meals of the Mediterranean cuisine.

Varenik is reduced wine must from grapes of the local plavac mali variety. Cooking the must takes a lot of time so it is reduced to at least a half or a third of its original content. When reduced, it is chilled and placed in open bottles for about a month, and then the bottles are closed and stored in a cold place.

It is used as an addition to a variety of dishes and sauces, where it acts as a base. Varenik is also very nutritious, and some say that it is a great aphrodisiac - in the past, it was typically combined with beaten eggs and given to newlyweds on their first night.
