Cripps pink is an Australian variety of apples which were developed by John Cripps in the late 20th century. The apples are characterized by their red color and flesh that is white to cream or pale yellow in color. These flavorful fruits are best consumed fresh, when the flavors are sweet and slightly sharp.


Although Cripps pink apples are usually grown in Australia, they can also be found in other countries such as Canada, Chile, Brazil, and the United States.

These world-famous green apples actually have Australian origins. According to legend, Maria Ann Smith found an apple seedling near her house in 1868. Shortly thereafter, it began to bear light green colored apples which proved to be perfect for both eating and cooking. Granny Smith apples were first commercially grown in New South Wales in 1895, and today, they are one of the most popular apple varieties in the world, characterized by their green exterior with a slight pink blush, bright white flesh, and firm texture.


The flavor can best be described as crisp with a strong tartness that’s reminiscent of lemons. When used raw, these apples pair well with sharp cheeses. Granny Smiths also hold their shape extremely well during baking, so they are mostly used in pies, cobblers, cakes, muffins, and tarts.

Lilly pilly is an evergreen plant with dense and glossy leaves. It is grown throughout Australia as an ornamental tree, as well for its fruit, known as lilly pilly or riberry. Since there are more than fifty varieties of the plant, the fruit can vary in size and color, but is typically pear-shaped or globular and ranges from magenta to light pink in color.


Characterized by a firm texture and a flavor that is reminiscent of apples and pears, the fruit can be eaten straight from the tree, but is also easily incorporated in various desserts, or made into jellies and sauces. It is available fresh from December to February, but frozen versions can be found all year round.

Typically found alongside creeks and tracks in sunny areas, Australian native raspberries grow on bushes that produce these flavorful, sweet, red-colored berries from June to October. They can be consumed fresh or used to make jams and sauces.


The leaves of native raspberries can also be used to make tea, which is said to help with digestion-related issues.
