Stringozzi

Stringozzi is an Italian wheat pasta variety characterized by its shape that is reminiscent of shoelaces, hence its name, derived from the Italian word stringhe, meaning strings. Its texture is quite rougher than the texture of spaghetti, allowing better absorption of the sauces.


Stringozzi has origins in the Italian region of Umbria, where local monks were reputedly the first to make it. Traditionally, stringozzi are served with black truffles and numerous meatless, tomato-based sauces.
